Is the handlebar clamp flexible or do you have to remove everything off your handlebars to install?

No, Easy Peasy to install in a moment. Open clamp, put in spacers and close clamp. We used all but one rubber spacer. We are also considering the 'other' model from the same company to make it easier to move from one bike to another. Great safe holder that can be securely used portrait or landscape by rotating it.

Wouldn't detach on a mountain bike?

This would work great on a mountain bike. It is very secure and holds your phone without any worry of losing it.

Does the mount separate enough to go around a bicycle handlebar without removing brakes, etc.?

Well Made

I’ve had one of these on my gravel grinder for a couple years that has worked very well. I just added another to my mountain bike. These are better made, and the locking mechanism works well where at least 3 have broken on a different brand. They may weigh a little more but it’s worth it.

Easy to mount and use

My son already used it for the last 9 months. I am now using it also on my bike. It is really easy to mount and use. It is not moving or sliding even on gravel roads.

Easy to mount on the bike (less than 5 mn) including adjustment.The locking pin is a smart plus.
Now I need to practice more extensively.
